Produced in small quantities from carefully selected Malvasia grapes that are left to dry on racks for a long period of time to increase sugar content before being vinified in small oak or chestnut barrels to guarantee a slow fermentation process of at least 4 years. This yields a wine that is alcoholic, around 16%, sweet in taste and amber in colour. Vin Santo is considered the wine of friendship and hospitality and usually uncorked on special occasions. It is consumed out with meals and acquires its name from the age-old tradition when it was used to celebrate holy mass.
